
Tomatoes aside, I usually have some coriander growing out on the balcony, but there never seems be enough to use for anything more than a garnish. Any recipe calling for a "whole bunch of coriander" would basically wipe out the one little tub I have on the go...and of course I then use the coriander so sparingly the whole thing bolts and becomes unusable anyway. There's no saving herbs + veggies for another day that's for sure.

When I say I like "simple" this recipe is the epitome of everything I hold dear in cooking...quick, easy and hardly any ingredients. It's perfect to whip up on a weeknight after work. It's on the table in about 15 minutes! And best of all, it tastes delicious, especially with a scattering of homegrown coriander.
