Balcony Garden: Harvest Monday #1

It's amazing how many "blog-hops" are out there in the big wide blogosphere. I've already joined in with the monthly "In My Kitchen" fun (not much happens in my kitchen as you know) and now I've stumbled across a great gardening blog hop that I couldn't resist joining in with - "Harvest Monday".  I harvested all these goodies on a Tuesday, but the lady running the blog hop is in the USA I think...so definitely Monday there.



The beetroots had been in the ground for quite a few months - planted from a "strip of seeds" but only five beetroots appeared (I was expecting about 15 - ripped off)!  The carrots have been in their pot since the beginning of July and we did pull a few up about 6 weeks ago but they were tiny - like (tasty) toothpicks.


My zucchinis have been hit and miss (no bees to pollinate = hand pollinating like a weirdo + a lack of something in the soil = tough zucchini times on the balcony).  That said I do seem to get a few good ones each week from my 5 plants despite the plants not being the healthiest specimens. AND my baby spinach continues so thrive...it's like a never-ending spinach supply.


So what did I do with this edible bounty? Why a roast vegetable salad of course!

Forgive the terrible photography (lit by the stove's range-hood) and my awful food styling - Donna Hay would NOT be impressed! I tossed all root veggies + zucchini  in a mix of olive oil along with some garlic and Spanish onion and popped the whole lot in the oven. After the veggies were cook they were tossed in with the baby spinach and some low-fat feta. YUM!

  1. Yumm looks delicious! I bet it couldn't get more satisfying than cooking with your own produce :) And so jelly over your baby spinach ! I swear I'm buying some every other week but I always have too much and it goes sad in the fridge :(

  12. I think beetroot is hard to photograph generally - all that pink bleeding into the other ingredients....you get some great stuff out of your balcony. Your carrots look far better than mine.
