Balcony Garden: Harvest Monday #49

After my great Pesto + Tomato Puff adventure for the annual food bloggers picnic I had a bit of basil leftover. I didn't want to throw it out (why grow it if you're only going to throw it out - that's CRAZY), but it had to be used that very night otherwise it would go limp, brown and sad.

Lucky I have a bottomless stomach and could handle MORE food after such an epic eating day.

The night before the blogger picnic I'd spotted a tasty sounding pasta dish on Instagram (I cannot remember who posted it so if it is YOU let me know) and it was SO simple that even a cooking noob like me could whip it up with no hassles.

So what are we talking about?  Pasta with basil, truffle oil and Parmesan cheese. That's it!

I cannot tell you how much I LOVE simple dishes like this.  All you need to do is cook the pasta, and after it's drained add it a bit of truffle oil, the basil and the cheese. Oh boy, this was TASTY and it was even more tasty as I knew the basil was homegrown. Would could be tastier than that?

So now you know how much I LOVE a simple recipe - do you have any you can share with me (the healthier the better of course)?
